i'm trying to figure out what else to make- i'm so freaking BORED so all i can do is cook/bake/cook/bake otherwise i'll just spend money. i'm trying to avoid that.

What about some bolognaise sauce (hubby can just boil up spaghetti when Alex is there) or some chicken a la King.
Those meals will not go to waste - trust me. We were eating them up to a month afterwards.
Man, you are one prepared woman! You will definitely appreciate those frozen meals once Alex arrives and you have no time to even think about preparing a meal ;) The puppies are so cute!
I'd suggest maybe a lasagna or two... speaking of which, I pointed a friend of mine to your food blog for the coffee cake recipe I loved so much. She also tried the lasgana recipe you posted - and her whole family (including their 2 year old) loved it! She made a spare to freeze (she's expecting baby #2 in about 4 weeks).
I totally PPH Cesna!!
